A Recipe to Shake Up Taco Night

You want to serve fun, nutritious dinners but are stuck in a pizza and mac & cheese rut. The solution?

Create nutritious versions of kid-friendly favorites. For example, kids love to fill taco shells – just replace meat with fish or shrimp to add a great twist to a classic meal. When you serve fish tacos with fresh lettuce, tomatoes and cheese, kids enjoy fun finger food and get the “brain food” they need.

Dietary recommendations suggest that all Americans, including children, eat seafood twice a week. Fish is a natural source of lean protein and omega-3 fatty acids, which have been linked to better brain development. Plus, it contains essential vitamins and minerals, including iron; zinc; and vitamins A, B and D.

As suggested by Sylvia Melendez-Klinger, registered dietitian and nutrition consultant, you should avoid pressuring kids to eat certain foods; but don’t give up too soon, either. The foods should be colorful and inviting. And, parents need to be a good example, eating a wide variety of good-for-you foods.

Crunchy Fish Tacos
Yield: 4-6 servings (8-12 tacos)
Preparation and Cook Time:
20 minutes

1 package of Gorton’s fish sticks (11.4 oz), popcorn shrimp (14 oz), and/or tenders (10.6 oz)
1 package yellow corn taco shells (12 ct), warmed

Garnish Suggestions:
1 cup lettuce, shredded
2 tomatoes, chopped
1 cup Mexican blend shredded cheese

Optional Sour Cream Mix:
2 tablespoons taco seasoning mix
1/2 cup low-fat sour cream
1/2 cup low-fat mayonnaise
1/4 cup fresh cilantro, chopped

Preparation:
Prepare seafood according to package directions. While seafood is cooking, place suggested toppings in individual bowls. Prepare optional sour cream mixture by combining sour cream, mayonnaise, cilantro and taco seasoning mix in small bowl. Mix well and place in individual bowl. Warm taco shells or tortillas according to package directions. Fill taco shells or tortillas with fish sticks, tenders or popcorn shrimp, suggested toppings and optional sour cream mixture.
